A FRIEND SHARED THIS RECIPE WITH US. WE TRIED IT AND IT’S GREAT!
1 Cup Chopped Onions
1/2 Cup Chopped Sweet Peppers
4 Garlic Cloves
2 Teaspoons Olive Oil
1/2 Cup Peeled and Grated Carrots
3 Teaspoons Chili Powder
2 Teaspoons Cumin
3 Cups cooked Black Beans (about 2 15oz cans.)
3 Tablespoons Dijon Mustard
3 Tablespoons Soy Sauce (We use Braggs Liquid Aminos – no added salt)
3 Tablespoon Ketchup (or Tomato Paste; or Salsa)
*(optional) a dash of Tobasco to taste.
1 1/2 Cup Rolled Oats. (not instant)
Saute onions, peppers, & garlic in the olive oil for about 5 Minutes – until the onions begin to soften. Add Carrots, Chili Powder, Cumin, and cook additional 5 minutes on low heat. Set this all aside.
Drain, rinse and mash the beans. (don’t over mash. Leave some character).Add Mustard, Soy Sauce, Ketchup, and sauted veggies to the beans.
Mix in the Oats.
Moisten your hands; form the burgers into patties.
Lightly spray or oil a nonstick skillet and cook on medium low heat for 5 to 8 minutes on each side.
Serve with or without a bun.
