Marge’s Cabbage soup recipe

  • 6 large green onions
  • 2 green peppers
  • 1 or 2 cans tomatoes, diced or whole (preferably no-salt added)
  • 3 carrots
  • 10 oz. container of mushrooms
  • 1 bunch celery
  • half a head of cabbage
  • 1 package onion soup mix (or maybe instead just some chopped onions)
  • 1 or 2 cubes of bullion (or try a low or no-salt veggie broth)
  • 48 oz. can of V8 juice (get the low or no-salt variety)
  • season to taste (ideas – pepper, parsley, garlic powder, etc.)

Cut up all the raw vegetables in bite-size pieces.

Use about 12 cups water or 8 cups and the V8 juice (that’s what Marge did), cover and cook on low heat for at least 2 hours.
