1 Cup Brown Rice
1 Lemon Juiced
3 TBSP Extra Virgin Olive Oil
1 TBSP Fresh Cilantro Leaves Chopped Finely
2 TBSP Fresh Parsley Leaves Chopped Finely
1 Small Seedless Cucumber Diced.
Diced Onions as desired.
Cook rice according to package directions. Transfer to a medium bowl. Add remaining ingredients toss to combine. Serve hot or chilled.
