Grace’s Carrot Raisin Salad
3 Medium Carrots Shredded (about 1 1/2 cups)
1 Small Apple Chopped (about 3/4 cup)
1/3 cup of Raisins
1/4 cup slivered Almonds
Dressing: 1 Teaspoon Lemon Juice & 1/3rd cup Mayo or Salad Dressing (I used “Nayonaise” – a soy based Mayo substitute. Available at your health food store; or at www.gnfi.com)
Mix the carrots, apples and raisins together. Mix the dressing separately and pour onto salad. (Thin the dressing if necessary with some soy or almond milk). Mix the nuts in before serving. ENJOY!
